Pineapple-Cheese Delight Recipe
Ingredients:
2 c of flour (cake)
1/4 c of cornstarch
1 c of sugar (refined)
3 tsps of baking powder (Calumet)
1/2 c of corn oil
1 tsp of salt
3/4 c of juice (pineapple)
7 pcs of egg yolks
1 tsp of lemon zest; grated finely
1/2 c of sugar (white)
8 pcs of egg whites
1 c of grated cheese (mild Cheddar)
1 tsp of cream of tartar
For the Frosting:
A drop of food color (yellow)
1-1/2 c of sugar (refined)
1 tsp of lemon extract
3/4 c of egg whites
1-1/2 tsps of juice (lemon)
For the Garnish:
Cherries (red)
Walnuts; minced
Instructions:
Beat sugar with yolks until light. Add juice, flour, oil, salt, and Calumet; beat moderately till smooth. Fold zest onto the mixture. Set on the side. Beat sugar with whites till stiff; fold mixture of yolk onto beaten whites. Add cheese onto batter then pour onto a 10×4 Bundt pan. Place inside (preheated) oven and bake 350 degrees F for 55 mins; invert the pan then allow to cool.
Combine whites with sugar; cook above gentle heat. Stir constantly till melted then transfer on a bowl and beat thoroughly. Add in the lemon extract, coloring, and juice. Spread on top and sides of the cake. Garnish walnuts and cherries.
