Peach Cheese Pie Recipe
Ingredients:
1 pkg of cream cheese (8 oz); softened
2 pcs of eggs (large)
1/2 c of sugar (refined)
2 tsps of milk (whole)
1 tsp of vanilla extract
1 pc of pie shell (unbaked, 9-inch)
3-2/3 c of sliced peaches (canned); drained, save 1/2 c of juice
1 tsp of cornstarch
1/4 c of sugar (refined)
1 tsp of juice (lemon)
Almond extract
Garnish:
Cherries (Maraschino)
Instructions:
Beat cream cheese inside a mixing bowl till smooth. Slowly add eggs, (half cup) sugar, vanilla and milk; beating thoroughly after adding each. Pour onto the shell. place inside the oven and bake, 375 degrees for half an hour.
Let pie cool. Combine (quarter cup) sugar and cornstarch inside a saucepan then slowly add juice from peach then the (almond extract), while stirring continuously. Cook above moderate heat, stir constantly till mixture has boiled and thickened.
Take out from heat and arrange peaches above the pie (petal fashion). Garnish cherries and spoon glaze above the fruits. Cover then place inside refrigerator till set, about an hour.
