Open-Faced Egg & Cheese Sandwiches Recipe
Ingredients:
1 Tbsp of butter (or margarine)
2 Tbsps of onion; chopped finely
2 Tbsps of pepper (green); chopped finely
6 pcs of beaten eggs
1/3 c of milk
1/4 tsp of salt
1/8 tsp of pepper (black)
6 pcs of english muffin halves (toasted)
1 Tbsp of butter (or margarine)
6 pcs of sliced pasteurized processed cheese (Amercan, 1 oz each)
Instructions:
Melt (1 tablespoon) butter inside a skillet. Add pepper and onion; cook till tender. Combine eggs, salt, pepper, and milk; mix thoroughly and pour onto sauteed vegetables.
Cook above gentle heat while stirring frequently. Continue to cook till eggs set (but still moist). Divide to six partitions.
Spread butter on the toasted halves. Top with the mixture of egg and cover with sliced cheese. Toast or broil till cheese turns slightly brown and melted, about five mins.
