Old Fashioned Tex-Mex Cheese Enchiladas Recipe
Ingredients:
4 Tbsps of flour
1/16 tsp of pepper (black)
3 Tbsps of chili powder
3 c of water (boiling)
1/4 c of softened butter (or oil)
12 pcs of tortillas (corn)
2 tsps of cumin (ground)
1-1/4 c of cheese (Cheddar or Monterey Jack); grated
1 tsp of salt
1 pc of onion (large); chopped or diced
Bouillon cube (beef)
1/2 c of bell pepper (green); chopped or diced
1/2 tsp of garlic powder
1-1/2 c of cooking oil (hot for frying)
Instructions:
Cook flour till browned, don’t burn. Add pepper, chili powder, cumin, salt, onion, bell pepper, garlic powder, and butter; blend thoroughly above gentle heat till smooth. Gradually add (boiling) water while continuously stirring. Add beef cubes; stir thoroughly. Simmer for an hour while stirring frequently. Fry tortillas individually until crisp. Drain (excess) oil and dip into the (enchilada) sauce. Put the fried tortilla onto a clean plate. Scoop a spoonful of hot mixture on middle then add (1 tablespoon) cheese on top.
Roll tortilla and fold its sides. Arrange on an ovenproof dish, with seam facing down. Do the same for all tortillas. Carefully pour remaining hot sauce above assembled tortillas and sprinkle some peppers and onions then lots of (grated) cheese. Place inside the oven and bake for 15 to 20 mins at 300 degrees F. Don’t overcook.
Variety: Add cooked chicken fillet or (ground) beef onto filling then reduce pepper/onion/cheese by half then add (1 tablespoon) meat.
