New Zealand Kiwi Cheesecake Recipe
Ingredients:
For the Crust:
1-1/2 c of cracker crumbs (Graham)
1/4 c of sugar (granulated)
Butter (don’t use margarine)
For the Cheesecake:
3 c of cream cheese
1 tsp of vanilla
1/4 tsp salt
4 pcs of beaten eggs (large)
1 c of sugar (granulated)
For the Topping:
1 c of sour cream (dairy)
1/2 tsp of vanilla
2 pcs of kiwi fruits (fresh); peeled and sliced
6 Tbsps of melted butter
2 Tbsps of milk
3 Tbsps of powdered sugar
Instructions:
Preheat oven at (350 degrees F). Combine sugar, crumbs, and butter; mix well then press firmly on a buttered 9-inch (springform) pan. Spread evenly then bake crust for ten mins. Let it cool.
(Cheesecake)
Preheat oven at (350 degrees F). Beat cream cheese, salt, vanilla, and milk inside a bowl till blended well. Add sugar then eggs, while beating continuously till creamy and light. Pour mixture on the crust. Bake till slightly brown, about thirty-five mins. Let cake cool, at about ten mins.
Combine sugar, vanilla, and sour cream; mix thoroughly and spread above the cheesecake. Bake again, about fifteen mins. Let it cool completely then place inside the refrigerator. Serve chilled with Kiwi slices on top.
