Mini Almond Cheesecakes Recipe
Ingredients:
3/4 c of ground almonds
An envelope of gelatin (unflavored)
12 ounces of light creamcheese
1/2 c of sugar
3 c of fresh peaches; sliced and peeled
1 Tbsp of melted margarine
1/4 c of cold water
3/4 c of skimmed milk
1/4 tsp of extract (almond)
Instructions:
Combine margarine and almonds. Tightly press the mixture into bottom part of twelve paper-lined bake cups. In saucepan placed over low-heat, soften unflavored gelatin in cold water ’til well dissolved. Separately beat sugar, extract, milk and creamcheese using a mixer set at mid-speed ’til well-blended.
Add gelatin. Have it poured into lined cups then freeze ’til firm. Have peaches processed by blender ’til smoothened. Scoop pureed peaches into plates. Have the cheesecakes removed from the fridge ten minutes prior to serving. Remove paper lining then gently invert into plates. Top w/ extra peaches, mint-leaveas and raspberries s you please.
