Mimi’s French-Toasted Cottage Cheese Sandwich Recipe
Ingredients:
4 bread slices
1 c of milk
5 Tbsps of drained cottage-cheese
1 tsp of sugar
2 large eggs
2 salt pinch
A pinch of cinnamon
Strawberries; sliced
1 & 1/2 tsp of vanilla
1 cinnamon-sugar
1 low-fat sourcream
Instructions:
Cut every bread slice into two. Beat the eggs w/ milk & salt. Separately mash the cheese w/ a pinch salt, sugar, vanilla and cinnamon ’til smooth. Spread 1/4 cheese mixture over half of the bread slices. Top w/ remaining half of the bread slices. Dip & soak gently every sandwich into milk-egg mixture, turn so that both bread sides can absorb mixture.
Have butter heated in ten-inch skillet. Once hot, add in sandwiches, make sure oil hasn’t browned yet. Reduce the heat then slowly fry sandwiches for 5-7 mins. Sprinkle w/ cinnamon-sugar then top w/ sourcream & strawberries, then serve.
