Macaroni & Cheese With Vegetables Recipe
Ingredients:
8 ounces of ribbon macaroni
1 Tbsp of flour (unbleached)
3/4 c of milk
1/2 c of grated cheese (Parmesan, 2 ounces)
1 tsp of basil
2 sliced scallions
1/4 tsp of pepper (black)
1 medium sweet redpepper; chopped
3 Tbsps of margarine; divided
1/2 c of vegetable broth
1/2 c of grated cheese (Cheddar, 2 ounces)
1 Tbsp of parsley (fresh); chopped
1/4 tsp of paprika
2 c of broccoli-florets
1 c of mushrooms (3 ounces); sliced
Instructions:
Boil water in pot. Cook macaroni ’til firm but not soggy. Drain once cooked. In medium saucepan, soften 2 Tbsp of margarine. Take away from fire then add in flour, stir ’til well-blended. Have the broth added, as well as your milk. Place over mid-heat stir ’til mixture boils & thickens.
Adjust to low-heat. Add cheeses & seasonings. Stir continuously ’til cheeses melt. Have pan removed from fire, then set mixture aside; melt rest of margarine (1 Tbsp) in skillet. Add rest of the ingredients. Allow to cook whole constantly stirring for 5 mins, ’til crisp and tender. Reduce to low-heat. Toss noodles into mixture then add in cheese-sauce. Garnish w/ curled scallions.
