Lemony Light Vineyard “Cheesecakes” Recipe
Ingredients:
1 pack of gelatin (unflavored)
8 ounces of softened creamcheese
1/3 c of sugar
1/4 tsp of vanilla
1 Tbsp of lemon rind; grated
1 & 1/2 c of grapes (seedless); halved
1/2 c of water (cold)
1 c of yogurt (plain)
1 Tbsp of lemon-flavored juice
4 icecubes
Instructions:
Sprinkle unflavored gelatin into water in saucepan. Stand for a minute ’til softened. Place over low-heat and warm to completely dissolve. Add gelatin, yogurt, lemon rind, vanilla, juice and sugar. Blend ’til smooth. Scrape sides when necessary. Add cubed ice then blend ’til smooth.
Have grapes divided between 6 (6 ounces) custard-cups. Pour over cheese-mixture in each cup. Chill ’til set. Top w/ grated rind & grapes to garnish.
