Chili-Cheese Corn Bread Recipe
Ingredients:
1/4 c of sharp-flavored cheese (Cheddar)
1 c of cornmeal (yellow) plus 2 Tbsp
1/4 c of whole-wheat flour
1/2 tsp of baking soda
1 large egg plus 1 eggwhite; beaten lightly
2 Tbsps of chopped mild chili (green)
2 tsps of baking powder
1 & 1/4 c of buttermilk
1/2 tsp of salt
Instructions:
Prepare oven. Heat it to four hundred fifty degrees Fahrenheit. Grease 8-inch square bake pan then dust w/ 2 Tbsps cornmeal.
You sift together rest of yellow cornmeal, flour, salt, baking soda and powder in bowl. Separately combine eggs, buttermilk, chili and eggs, then blend into dry components.
Pour the batter carefully into greased bake pan & put in the upper 1/3 of the oven. Let it bake for 10 mins or ’til dough will have a firmed center.
