Chile Cheese Grits Recipe
Ingredients:
3 c of water
2 large eggs
1 tsp of salt
1/2 c of milk
1 clove garlic; minced
1/2 c of butter/margarine
1 c of grits (quick-cooking)
1 & 1/c c of cheese (Cheddar, 6 ounces); shredded and divided
1 c of chilies (green); drained and chopped
Instructions:
Combine and boil garlic, water and salt. Add in grits. Adjust heat and reduce to low-fire. Cook mixture, stirring constantly for 3 to 5 mins or ’til thick. Remove pan from the heat. Blend in 1 c cheese, chilies and butter. Stir well ’til butter is melted. Beat the eggs then add milk; pour egg-milk mix into grits mixture, mix thoroughly.
Pour mixture into greased 2-quarts bake dish. Then bake without cover at three hundred fifty degrees Fahrenheit for forty-five minutes, then sprinkle w/ rest of cheese.
