Chicken With Goat Cheese Recipe
Ingredients:
4 ounces goat-cheese
1 tsp of dry basil leaves
1 Tbsp of sun dried tomatoes; minced and soaked in heated water then drain
1 lightly beaten egg
1 & 1/4 c of red-pepper wine-sauce; roasted
Parsley
4 skinless, boneless chicken-breast cuts; pounded
1 tsp of oil (olive)
1/8 tsp of dry thyme leaves
1/2 c of cracker or biscuit crumbs; seasoned w/ 1/2 tsp crushed dry basil
Olive-oil cook spray (nonstick)
Instructions:
Mix cheese, thyme, oil, tomatoes & basil in bowl. Equally divide mixture into 4 parts then form them into logs. You place each log in between flattened meat then roll the chicken to cover cheese. You dip rolls in eggwhite then into crumbs w/ seasoning; arrange w/ seam-side-down in bake dish and cover. Let it bake at 350 degrees F for 20 mins.
Remove cover then spray w/ oil cook spray. Adjust oven temp to 450 degrees F, then bake for 10 more mins. Have each chicken-breast cut into 4 slices then spread toasted sauce on chicken’s top. Top w/ parsley.
