Chicken Enchiladas With Cheese Recipe
Ingredients:
2 c of cooked chicken; shredded
1 clove garlic; crushed
1/4 tsp of salt
1 whole pepper (Jalapeno); canned
12 pcs corn tortillas
5 pcs chicken cubes (Bouillon)
1 onion (large); chopped
1/3 c of oil (olive) plus 2 Tbsps
16 ounces of tomato sauce
3 c of heavy-cream
1 onion (large); chopped
1/4 tsp of sugar
Instructions:
Remove seeds of Jalapeno then chop. Saute chopped onion in 2 Tbsps olive oil ’til translucent. Add garlic, salt, tomato sauce, chicken, peppers and sugar. cover & simmer for 5 mins. Heat heavy cream in saucepan. Have chicken cubes dissolved in cream. Set mixture aside. Meanwhile, in skillet, you heat 1/3 c oil then dip in tortillas, ’til hot-boiled, turn for few secs to have it softened a bit. Drain tortillas well.
To assemble: Dip tortilla piece into cream-mixture. Put in flattened surface then put 2 to 4 Tbsps of chicken mix in between, then roll it up. Arrange tortilla pieces in 13 x 9-inch bake dish w/ seam-side-down. Do the same for the other tortillas. You pour over cream-mixture over your enchiladas then cover w/ cheese. Have it baked at 350 degrees F for 25 to 30 mins ’til cheese melts and browns.
