Cheese Stuffed Zucchini Blossoms W/ Fresh Tomato Recipe
Ingredients:
16-18 zucchini blossoms
1/2 c of grated cheese (Jack)
1 pc Jalapeno; seeded & chopped
2 Tbsps of parsley; chopped
1 tsp of powdered cumin
Salt
Pepper
1 c of cheese (Ricotta)
1/2 c of ham; chopped
1 tsp of oregano (fresh); chopped
1 medium-sized tomato; seeded, peeled, diced, drained
4 Tbsps of oil (olive)
1 pc onion; finely chopped
1 c of dry white-wine
4 tomatoes (large); seeded then chopped
1 Tbsp of tomato paste
Instructions:
Preheat your oven three hundred twenty-five degrees Fahrenheit. Combine cheeses, Jalapeno, ham, herbs, 2 Tbsps of olive oil and 1 medium tomato (skinned, seeded and diced). Season w/ pepper and salt to taste. Scoop a tablespoonful of mixture into zucchini blossoms, then drizzle w/oil. Transfer to a greased, shallow, covered bake dish lined w/ tin foil then bake for 15 mins. Remove cover then bake for 15 mins more.
For the sauce: You heat oil in small skillet. Saute onions ’til softened. Blend in wine, tomato-paste and tomatoes. Cook without cover ’til volumes is reduced & mixture slightly thickens (approx 5-8 mins), constantly stirring. Season w/ pepper and salt. Pour sauce all over the blossoms then serve dish at once.
