Cheese Souffle (Syd) Recipe
Ingredients:
2 eggs (large); separated
1 & 1/2 Tbsp of flour (all-purpose)
1/2 c of milk
1 Tbsp of cheese (Parmesan); grated
1 & 1/2 Tbsp of butter
1/4 tsp of dried mustard
A dash of salt
1/2 c of cheese (Cheddar); grated
Instructions:
Place eggwhites in small-sized deep mixing bowl & the eggyolks in separate bowl. Slightly beat the yolks. Have your baking dish greased then dusted w/ flour. Preheat oven, 375 degrees F. Melt butter in saucepan. Once melted remove pan form fire the stir mustard & flour in. When smoothened, add milk. Constantly stir while cooking mixture ’til it fully boils.
Beat eggyolks while pouring in previous mixture in very thin fluid stream. Blend in Parmesan and cheddar cheese. Beat eggwhites w/ salt using your mixer ’til hard peaks form. Add in tablespoonful of beaten eggwhites into yolk mix. Fold the rest of eggwhites carefully. Pour batter into greased dish, then smoothen top surface evenly. Bake souffle at 375 degrees F for 10-15 mins ’til puffed & browned.
