Cheese Scones Recipe
Ingredients:
1 c of flour (all-purpose)
1 tsp of dried mustard
Butter
1 c of whole wheat flour
3/4 c of sharp cheese (Cheddar); shredded finely
1 & 1/2 tsp of baking soda
A pinch of salt
3 tsps of cold margarine or butter; cut into small pieces
2/3 c of milk
Instructions:
Prepare oven. Heat it to four hundred twenty-five degrees Fahrenheit. Grease lightly a large-sized bake sheet, then set it aside.
Combine and sift together flour (all-purpose), mustard, salt and baking powder in mixing bowl. Add in whole wheat flour. Rub cold margarine or butter in using clean fingers, mix well ’til crumbly. Add 1/2 c of cheese. Create a small well between the mixture, then add in milk. Mix w/ the use of large fork, ’til dough creates a mixture that barely binds together.
Turn it out into floured working surface, then lightly knead/ Use a rolling pin sprinkled w/ flour in rolling out dough, creating a circle that is about 3/4 inch in thickness. Form smaller circles using 2-inch sized cookie or biscuit cutter. Arrange 1 -1 & 1/2″ apart from each other on your bake sheet. Dust w/ reserved 1/4 c of cheese. Have it baked for 8 to 10 mins or ’til golden and risen well. Transfer into racks to completely cool. Split & serve w/ butter once cooled.
