Cheese Manicotti Florentine Recipe
Ingredients:
16 pcs of noodles (manicotti)
1 lb of cheese (Cottage or Ricotta varieties)
1/2 lb of cheese (Mozzarella)
1 c of cheese (Parmesan)
2 pcs of eggs; well-beaten
1 Tbsp of parsley; chopped
1/4 tsp of pepper
1/2 lb of spinach; steamed
1/2 tsp of salt
1/8 tsp of nutmeg
1 pc of onion (small); chopped
2 c of spaghetti sauce
1/2 lb of mushrooms
Instructions:
Sautee mushrooms and onions ’til tender. Combine spices, parsley, eggs, Parmesan (3/4 cup), Mozzarella and Ricotta. Add the spinach as well as sauteed onions/mushrooms. Stuff mixture into uncooked noodles.
Arrange stuffed noodles in layer on greased 13″ x 9″ pan for baking. Add the rest of sauteed mixture into sauce and submerge noodles with it. Drizzle top with the rest of Parmesan cheese. Bake 35 mins, 350 degrees Fahrenheit.
