Cheese Dip Recipe
Ingredients:
1 c of farmer’s or hoop cheese
1 c of flour
1/2 tsp of salt
1/2 c of sugar
1.5 c of Concord wine (grape)
1 Tbsp of orange zest; grated
3/4 c of raisins (golden); plumped using frying oil
3/4 c of milk
3 pcs of eggs
3 Tbsps of sugar
Instructions:
Beat cheese using electrical mixer. Add salt, milk, sugar, flour and eggs, blending well. Then fold mixture with raisins. Using large skillet (heavy), heat a 1/4″ deep oil on moderate fire. Drop a spoonful of cheese mix to fry ’til gold-brown in color in each side. Drain using papertowels and serve along Concord sauce.
To make the sauce, boil wine with sugar, stirring ’til sugar completely dissolves. Drop zest then simmer ’til sauce reduces by a third. Sauce can be served either cold or hot.
