Cheese Blintzes Recipe
Ingredients:
1 & 1/4 tsp of salt
2 pcs of eggs
1 tsp of peanut oil
1 pack of cheese (cottage, 8 ozs)
1 c of flour (unsifted)
1/4 c of sugar
1 c of milk
1/4 tsp of cinnamon
Instructions:
Beat 1/2 amount of eggs a bit in bowl then add milk, 3/4 of salt as well as oil, blending thoroughly. Slowly drop the flour, continue beating ’til smooth. Drop about 2 Tbsps of batter on skillet with surface that is oiled lightly and hot. Have the pan tilted around, spreading batter. Allow to cook on low flame ’til set then lift blintz off pan. Redo whole process with the rest of batter.
Mix cinnamon, the rest of the salt, sugar, egg as well as cottage cheese, blending together well. Drop 2 Tbsps of this mixture to middle of blintz. Bring each of blintz’s sides to center and roll it up. Fry blintzes in shallow pan with hot oil at 375 degrees F ’til gold-brown in color. This recipe can make 16 pieces of blintzes.
