Celery Stuffed With Blue Cheese Recipe
Ingredients:
12 pcs of (outside) ribs of celery; sliced into 1/3s
1/2 c of Ricotta (part-skim)
1/2 c of cheese (Cottage)
2 ozs of cheese (blue, crumbled)
A dash of Tabasco or any hot sauce
Instructions:
Place celery in iced water and cover then refrigerate ’til ready for serving. Puree cheese (cottage) and Ricotta ’til smooth and pour into bowl, adding cheese (blue) and Tabasco then stirring ’til well-blended. Cover then refrigerate ’til ready for serving.
Prior to serving, drain and dry celery as well as stuff with blue cheese mix. Lay decoratively on serving dish.
