Mozarella In Carozza (Fried Cheese Sandwiches) Recipe
Instructions:
12 slices of white-bread
1 c of milk
2 slightly beaten eggs
2 Tbsps of butter
2 ounces minced anchovies
6 cheese slices (Mozarella)
Flour
1/2 c of oil (Olive)
1 clove garlic (small); crushed
1 Tbsp of lemon-flavored juice
Instructions:
Trim bread crusts. Slice cheese equally into square pieces, w/ size bit smaller than that of your bread. Put cheese slices on bed at least 1/8-inch from sides. Cover w/ remaining six bread slices. Dip your sandwiches in milk, have them dredged w/ flour & coated w/ egg. Have your oil heated in thick skillet placed over mid-heat. Once your oil turns slightly hot, cook and brown your sandwiches ’til crisp and golden-browned.
Remove from skillet then drain well in paper-towels. Transfer sandwiches to warmed platter. Heat 2 Tbsps of butter in pan place over mid-heat. Swirl garlic in quickly then add anchovies, stirring well for a minute. Blend in juice, mix well then pour sauce carefully over prepared sandwiches, then serve at once.
