Chocolate Cheese Mousse Pie Recipe
Ingredients:
1/4 c skimmed milk
An envelope of gelatin (unflavored)
2 eggs (large); separated
1 Tbsp of cocoa (unsweetened)
1 & 1/2 c of low-fat cheese (Cottage)
1/8 tsp of cinnamon
1 Tbsp of vanilla
6 Tbsps of sugar
2/3 c of skimmed milk
1/3 c of cracker crumbs (Graham)
Instructions:
Place 1/4 c of skimmed milk in blender, have the gelatin sprinkled over the milk. Soften gelatin for five minutes. Boil 2/3 c of skimmed milk. Add in eggyolks, 4 Tbsps of sugar, vanilla and cocoa. Blend well at mid-speed ’til well-mixed; add in cottage cheese then blend ’til smoothened. Refrigerate ’til thick.
You beat eggwhites, add rest of the sugar then fold onto mixture. Combine cinnamon and crumbs. Press into an 8-inch pie plate. Pour mixture in then refrigerate.
