Chile Con Queso (Chiles With Cheese) Recipe
Ingredients:
20 pcs fresh chilies (green); roasted
1 onion (medium); sliced thinly
3/4 c of milk
1/2 pound of mild cheese (Cheddar)
5 Tbsp of oil (peanut)
1 skinned tomato (medium)
3 Tbsps of water
1 & 1/2 tsp of salt
Instructions:
Peel roasted chilies then cut into strips w/o having their seeds removed. Heat oil, then cook onion w/o browning ’til soft. Thinly slice tomatoes then add into pan w/ chili strips.
Cover & cook it over mid-heat for 8 mins. Add water & milk. Cook mixture for few mins. more. Thinly slice cheese then add w/ salt into chili mix just prior to serving.
