Onion Soup With Raclette Cheese Croutons Recipe
Ingredients:
2 Tbsps of butter (unsalted)
5 pcs of onions (medium); sliced thinly
6 c of stock (chicken, or canned low-sodium broth)
1-1/2 c of (white) wine (fruity, gewurztraminer)
4 pcs of bread slices (crusty french bread)
4 oz of cheese (Raclette); sliced
Instructions:
Melt the butter inside a large (Dutch) oven above moderately high heat then add the onions. Cook till golden and soft, while stirring constantly, at about twenty mins. Add the stock; simmer for half an hour then add the wine; simmer for five mins.
Preheat the broiler. Toast the bread (on both sides) inside the broiler. Cover cheese on each slices then toast again till cheese melts and bubbles. To serve, place a toast on a soup bowl and pour over the soup.
