Pinto Bean & Feta Cheese Quesadillas Recipe
Ingredients:
1-1/2 can of beans (pinto, 15-16 oz);drained and rinsed
3/4 c of onion (red); chopped
3/4 c of parsley (fresh); chopped
1-1/2 c of peppers (jalapeno); seeded and minced
1-1/2 tsp of chili powder
1/2 tsp of cumin (ground)
6 pcs of tortillas (flour)
1/2 c of crumbled cheese (Feta)
Vegetable oil
Instructions:
Combine beans, onion, parsley, jalapeno, chili powder, and cumin; process inside the processor till chunky. Pour onto a bowl then season salt & pepper. Spread one-third of processed mixture onto a tortilla then top one-third of cheese and cover with tortilla.
Brush oil on a heated skillet. Add the quesadilla and cook till brown and heated. Do the same for the rest.
