Borekas Stuffed With Cheese & Spinach Recipe
Ingredients:
1 & 3/4 c of water
2 c of flour
Juice from 1 lemon
5 Tbsp of oil
Salt
1 c of margarine
For the Cheese Filling:
2 pcs of potatoes; boiled & peeled
1/2 lb of cheese (cheddar); grated
1 pc of egg
1 Tbsp of margarine
For the Spinach Filling:
1 lb of spinach
Lemon juice (to taste)
2 Tbsps of butter
2 cloves of garlic; chopped finely
Salt (to taste)
Pepper (to taste)
1 pc of egg; beaten
5 ozs of sesame seeds
Instructions:
Create cheese filling by mashing margarine, potatoes, eggs and cheese then mixing well. Set mixture aside.
Create spinach filling by cooking spinach with water. Saute garlic with butter; drop into spinach. Pour/mix pepper, juice as well as salt well. Set filling aside. Mix salt, water, juice, oil and flour to create dough. Set dough; roll it on floured surface and coat dough with margarine. Fold into 1/3 then refrigerate half an hour. Afterwards, repeat rolling-folding-refrigerating process.
Take out dough; roll once again into wide thin rectangular shape; slice into 3″ squares and place filling (1 teaspoon of cheese, 1 teaspoon of spinach, or 1/2 teaspoon of both fillings) per square. Then fold square pieces into triangle then seal by pinching the edges. When done, brush egg (beaten) then drizzle with sesame seeds. Put into preheated oven and bake under 350 deg Fahrenheit ’til golden in color or about half an hour. This recipe creates 12 pieces.
