Broccoli Cheese Pie Recipe
Ingredients:
10 ozs of broccoli; cut into florets, blanched and drained
1 c of milk (evaporated & skimmed)
1 pc of egg
1 tsp of oregano (dried)
1 pc of carrot; thinly sliced, blanched
3.5 ozs of cheese (feta)
1 pc of pepper (red, small); sliced into julienne strips
1 pc of pie shell (8″)
Instructions:
Preheat the oven, 325 deg Fahrenheit. Arrange broccoli into a layer on pie dish or shell then top with crumbled feta cheese. Lay out the rest of the broccoli above with flowers facing outwards and stems facing center then add in the (red) pepper and carrots.
In a separate bowl, combine milk, oregano as well as egg. Pour the milk mixture over the broccoli. Cover loosely with an aluminum foil and bake (1 hour) or ’til filling settled. Bake without foil 10 mins. before removing from oven. Makes 6 serving portions.
