Orange-Butterscotch Cheesecake Recipe
Ingredients:
For the Base:
1-1/4 c of oats (old fashioned or quick)
1/4 c of sugar (brown)
2 Tbsps of flour
1/4 c of melted margarine
For the Body:
3 pkgs of cream cheese (8 oz each); softened
3/4 c of sugar (granulated)
2 tsps of orange zest; grated
1 tsp of vanilla extract
4 pcs of eggs
For the Topping:
1/2 c of sugar (brown)
1/3 c of corn syrup (light)
1/4 c of melted margarine
1 tsp of vanilla extract
Garnish:
Orange slice or fresh mint
Instructions:
Combine sugar, oats, margarine and flour; press firmly on the base of a 9-inch (springform) pan. Place inside the oven and bake for fifteen mins, 350 degrees F. Combine sugar, zest, vanilla, and cream cheese; beat till blended well. Add the eggs individually, while beating continuously, and once blended well, pour onto the crust and bake for 65 mins, 325 degrees F.
Run a knife on the sides to loosen the cake. Let it cool completely then remove the rim; place the cake on the side. Combine syrup, margarine, and sugar inside a saucepan. Let it boil while stirring frequently. Add vanilla and stir thoroughly. Let it chill till slightly thick then spoon onto the cheesecake. Serve chilled and garnish if preferred.
