Caroline’s Cheese Pudding Recipe

Ingredients:

2 slices of bread; split into crumbs
4 ozs of cheese (cheddar or gruyere); grated
2 pcs of eggs (large); separate yolks from whites
2 tsps of mustard (French-style)
10 fl ozs of milk
Salt
Pepper
Parsley or chives; chopped fresh

Instructions:

Mix cheese with crumbs, milk as well as mustard. Add yolks. In separate bowl, whip egg whites ’til very stiff then Fold whites with cheese mixture. Insert parsley or chives in between folds when desired.

Pour mixture into buttered dish (for souffle or for pie) then bake at 375 degrees F for 1/4 hour.
