Beer Soup With Cheese Recipe
Ingredients:
1/2 c of onion (medium); chopped
2 Tbsps of margarine (or butter)
12 oz of beer (any brand, bottled or canned)
1/2 c of carrot; chopped finely
1/2 c of celery; chopped finely
2 c of broth (chicken)
1 tsp of salt
1 tsp of cumin (ground)
1/4 tsp of nutmeg (ground)
1/16 tsp of cloves (ground)
1/16 tsp of pepper
1 c of sour cream (dairy)
For the Garnish:
1 c of cheese (Monterey Jack or Cheddar); cubed 1/4 inches
Instructions:
Heat margarine on a saucepan; add onion then saute till limp. Add beer, carrot, and celery; stir and let it boil. Once boiling, reduce the heat and cover. Let it simmer for 10 mins.
Add broth, salt, cumin, nutmeg, cloves, and pepper; let it boil again. Once boiling reduce the heat and cover. Let it simmer for half an hour. Take out from the heat then add sour cream and stir. Sprinkle cheese.
