Bacon Avocado & Cheese Omelet Recipe
Ingredients:
16 pcs of beaten eggs
1/2 c of water
1 c of melted margarine
2 c of bacon; cooked then crumbled
4 pcs of avocados (small); peeled then cubed into 1/2 inch
2 c of cheese (Monterey Jack); grated
For the Salsa:
8 pcs of tomatoes (ripe, large); chopped finely
3 pcs of onions; chopped finely
1 jar of peppers (jalapeno); chopped
1 can of chilies (green)
2 pcs of garlic cloves; chopped finely
4 Tbsps of coriander (ground)
4 Tbsps of juice (lemon)
1/2 tsp of caraway seeds
1 tsp of cumin (ground)
1/2 tsp of red pepper
Instructions:
Combine eggs, water, margarine, bacon, avocados, and Monterey Jack cheese. Pour onto a foil-lined greased (Dutch) oven. Bake, 375 degrees F till set. Combine tomatoes, onions, jalapenos, chilies, garlic, coriander, lemon juice, caraway seeds, cumin, and red pepper inside a medium-sized pot. Cook till boiling, while stirring constantly. Serve the omelet with hot salsa on the side.
