Backyard’s Jalapeno Cheese Grits Recipe

Ingredients:

8 c of water
1-1/2 c of quick grits
1 c of butter (unsalted)
2 pcs of jalapenos; diced
1 pc of bell pepper (red, medium); diced
1 pc of pepper (poblano, medium); diced
1 pc of onion (medium); diced
1 c of grated cheese (Cheddar)
1 c of grated cheese (Monterey Jack)
4 pcs of beaten eggs
Salt (to taste)

Instructions:

Boil water then add the grits then let it simmer, about five mins. Set on the side. Melt the butter inside a skillet above moderately-high heat then add onion and peppers. Saute till tender, at about five mins; add onto the grits then add the cheeses and eggs. Season salt when needed.

Pour onto a (2-quart) casserole and place inside the refrigerator till ready for cooking. Preheat oven at 350 degrees F. Place the casserole inside the oven and bake for twenty-five mins. Serve at once.
