Autumn Cheesecake Recipe
Ingredients:
For the Base:
1/2 tsp of cinnamon
1 c of cracker crumbs (Graham)
3 Tbsps of sugar (white)
1/4 c of melted margarine
For the Body:
2 pkgs of cream cheese (8 oz each); softened
1/2 c of sugar (refined)
2 pcs of eggs (large)
1/2 tsp of vanilla
For the Topping:
4 c of apples; peeled, cored, and sliced thinly
1/3 c of sugar (refined)
1/2 tsp of cinnamon (ground)
1/4 c of pecans; chopped
Instructions:
Combine cinnamon, sugar, margarine, and crumbs; press firmly onto the base of a 9-inch (springform) pan. Place inside the oven and bake for ten mins, 350 degrees F. Combine sugar with cream cheese; beat until blended well. Add the eggs individually, while beating continuously. Add vanilla; blend thoroughly and pour mixture above the crust.
Toss cinnamon, apples, and refined sugar; spoon above the layer of cream cheese then sprinkle pecans on top. Bake for 70 mins, 350 degrees F. Run a knife on the edges to loosen the cake. Let it cool completely before placing inside the refrigerator. Serve chilled.
