Austrian Cheesecake Recipe
Ingredients:
For the Crust:
Shortbread
For the Cheesecake:
2 c of cheese (Cottage or Farmers)
1/2 c of sugar (granulated)
5 pcs of eggs (large) separated
1/2 c of milk
1/2 tsp of grated lemon zests
1 tsp of vanilla
3/4 c of flour (unbleached); sifted
1/4 c of powdered sugar
3 Tbsps of raisins (golden); chopped finely
Instructions:
Preheat oven, 300 deg F. Press cheese to a mesh strainer and place on a mixer bowl. Add sugar and beat till light and add yolks individually, while beating continuously. Add milk, vanilla, and zests. Slowly add sifted flour then blend thoroughly till mixture has smoothened. Beat whites of egg till stiff, then slowly add powdered sugar, while beating continuously till mixture becomes very stiff. Fold meringue onto mixture of cheese, then fold in raisins.
Pour mixture over the crust and bake inside preheated oven, at about fifty-five mins till center is firm. When done, leave cake inside the turned off oven, at about fifteen mins then take it out and let it cool completely.
