Australian Cheesecake Recipe
Ingredients:
For the Crust:
1-1/2 c of cracker crumbs (Graham)
6 Tbsps of melted butter
1/4 c of sugar (granulated)
For the Cheesecake:
2 c of cream cheese
1/2 c of sugar (granulated)
3 pcs of eggs (large); separated
1/4 c of flour (unbleached)
1 tsp of grated lemon zest
2 tsps of juice (lemon)
1 tsp of vanilla
1/2 c of cream (heavy)
2 Tbsps of passion fruit
Instructions:
Combine crumbs, sugar, and crumbs; mix thoroughly and press firmly on a pie plate. Beat cream cheese, sugar, and egg yolks till creamy. Combine flour, lemon zests, lemon juice, and vanilla then add onto the cream cheese mixture; mix thoroughly. Beat egg whites till stiff and fold into the mixture. Add cream and fruit and mix thoroughly. Pour onto the crust and bake till puffed and slightly brown.
