Asparagus With Blue Cheese & Walnut Relish Recipe
Ingredients:
6 oz of cheese (Blue, without rind and crum)
3 Tbsps of chopped walnuts
3 Tbsps of chopped scallions
2 Tbsps of chopped parsley (fresh)
1-1/2 tsps of lemon rinds; grated
2-1/2 lbs of asparagus
Salt
Instructions:
Place cheese, scallions, walnuts, rinds, and parsley inside a mixing bowl; mix them well. Cut asparagus then discard the woody and tough ends. Blanch asparagus with small amount of salt.
Drain then season more of the salt when needed. Arrange the blanched asparagus onto a heated serving platter and top them with cheese mixture. Serve immediately.
