Amaretto Cheesecake With Apricot Glaze Recipe
Ingredients:
For the Crust:
1 c of wafer crumbs (Graham)
1/2 c of almonds; chopped, toasted and unblanched
2 Tbsps of sugar (refined)
1/4 c of melted butter
For the Filling:
4 pkgs of softened cream cheese (250g)
1 c of sugar (refined)
3 Tbsps of flour
4 pcs of eggs (large)
1 c of sour cream (dairy)
1/4 c of Amaretto (di saronno liqueur)
For the Glaze:
1/2 c of apricot jam
1 Tbsp of Amaretto (di saronno liqueur)
Instructions:
Combine the crumbs, almonds, butter, and sugar; mix thoroughly. Press firmly into the base of 9 inch (springform) pan. Place on the side. To make the filling, mix cream cheese, flour, and sugar inside a mixing bowl; blend thoroughly then add the eggs individually, while beating continuously. Add liqueur and sour cream; blend them well.
Pour the filling above the crust and bake at 450 degrees F for ten mins. Reduce the temperature into 250 degrees F and continue to bake for an hour. Let it cool before placing inside the refrigerator to chill. To make the glaze, combine liqueur and jam on a medium saucepan above heat, stir constantly till heated through and mixture is smooth. When done, strain the mixture then pour onto the cheesecake. Remove the pan sides before serving.
