Alsatian Cheese Tart Recipe
Ingredients:
For the Dough:
4 c of flour (cake)
5/8 c of sugar (refined)
1-1/4 c of butter (sweet)
1 pc of egg (large)
1/16 tsp of juice (freshly squeezed lemon)
1/8 tsp of vanilla bean seeds (fresh) or
2 to 3 drops of vanilla
For the Filling:
16 oz of cheese (Fromage Blanc, Farmers Cheese, Ricotta)
3/4 c of cream (heavy)
4 pcs of eggs (large); separated
3/4 to 1 c of sugar (refined)
2 Tbsps of Kirsch
1/2 tsp of cinnamon (ground)
1 tsp of vanilla extract
Grated zest from 1/2 pc of lemon (fresh)
Instructions:
Combine flour, sugar, butter, egg, lemon juice, and vanilla inside a mixing bowl. Mix gently till a dough is formed, don’t overwork; let it stand for half an hour before using. Preheat the oven at 375 degrees F. Roll dough out on a floured work surface then line a 9 or 10 inch pie dish. Beat cream and cheese inside a mixing bowl then add yolks, cinnamon, sugar, vanilla, zests, and kirsch. Mix them thoroughly till mixture has smoothened, then beat the whites of the eggs till stiff then fold it onto the mixture.
Transfer mixture onto the pie dish. Bake inside preheated oven for 40-45 mins or till puffed slightly and browned. Let the pie cool completely before placing inside the refrigerator.
